Coffees are listed at three roast levels: “Light”, “Medium” or “Dark.” These terms are defined differently within the coffee roasting industry. Medium roasts have finished first crack and been given some time to develop. They are dropped prior to the onset of the second crack. Dark roasts have been taken just into second crack.
