Coffees are listed at three roast levels: “Light”, “Medium” or “Dark.” These terms are defined differently within the coffee roasting industry. Here’s what they mean for the coffees listed on this site: Light roasts are dropped just as the first crack is ending or very shortly after it has ended. Medium roasts have finished first crack and been given some time to develop. They are dropped prior to the onset of the second crack. Dark roasts have been taken just into second crack.
